Cheesy Chicken Parmesan Tortellini

This is an easy one pan meal that is perfect for a weeknight!

Equipment

Ingredients

  • 2 large chicken breasts cut into cubes
  • Salt, pepper, garlic powder (for chicken)
  • 1/2 cup of flour
  • 1/2 tsp each of salt, pepper, paprika, garlic powder
  • 1 tsp Italian seasoning
  • 2 TBSP olive oil
  • 2 TBSP butter
  • 19 oz bag of frozen tortellini
  • 24 oz jar of pasta sauce I used Rao’s
  • 1/4 cup of water
  • 3/4 cup shredded mozzarella cheese
  • 1 cup shredded Parmesan cheese plus more for topping
  • Dried parsley

Instructions

  • Cut chicken into cubes and season with some salt, pepper, and garlic powder.
  • Mix together flour, salt, pepper, garlic powder, paprika, and Italian seasoning in a container.
  • Dredge chicken into the flour/seasoning mixture(salt,pepper,paprika,garlic powder, Italian seasoning).
  • In a skillet heat olive oil and butter over medium high heat. Cook chicken for 4-5 minutes on each side or until golden brown and it reaches 165 degrees.
  • Top with 1 cup of shredded Parmesan cheese. Stir well until chicken is well coated in cheese. Remove chicken from the pan.
  • Turn heat to medium. Pour in one bag of frozen tortellini and top with a jar of pasta sauce and about 1/4 cup of water. Cover with a lid and let cook for about 5 minutes or until tortellini is tender.
  • Top with shredded mozzarella and the cooked chicken. Top with shredded Parmesan cheese and dried parsley. Enjoy!
