These grilled foil packet dinners are an easy family-friendly dinner!

BBQ Cheeseburger Foil Packets

Ingredients

  • 24 oz bag baby potatoes quartered
  • 1 onion chopped
  • 1/2 bag baby carrots sliced
  • Olive oil
  • 1 tsp each salt, pepper, dry mustard, onion powder, garlic powder, and smoked paprika
  • 4 (1/4 lb) burger patties
  • BBQ sauce
  • 1 cup shredded Colby Jack cheese
  • 4 pieces of bacon (cooked and crumbled) OR bacon bits
  • 1/3 cup French's crispy fried onions
  • Aluminum Foil

Instructions

  • If you don't have any leftover bacon from breakfast, cook your bacon however you like! If you don't want to cook bacon you could also just use bacon bits!
  • Chop an onion, slice the baby carrots in half, and quarter a bag of baby potatoes.
  • Lay out a couple of pieces of aluminum foil. Spray the foil with cooking spray. Add a handful of potatoes, a handful of onion and some baby carrots. Drizzle a little bit of olive oil over the veggies. Season with a little bit of the seasoning blend.
  • Top with a burger patty and season with a little bit more seasoning. Top the burger with a drizzle of BBQ Sauce.
  • Wrap aluminum foil up tightly. Repeat until all 4 foil packets are assembled.
  • Heat a grill over medium heat. Place foil packets on the grill and cook for about 25 minutes or until the ground beef is fully cooked and the veggies are tender.
  • Carefully open the foil packet and add some shredded Colby Jack cheese, bacon, and fried onions. Place back on the grill to melt the cheese if needed. Enjoy!

  • The seasoning blend, carrots, onions, and burger patties can all be prepped ahead of time. I would wait to cut potatoes until right before making the foil packets.
  • Be sure to cut the potatoes into quarters, so they cook properly.
  • Slicing the carrots in half lengthwise will help ensure they are tender.
  • Any BBQ sauce your family likes can be used in this recipe. If you aren't a fan of BBQ sauce these are also good with steak sauce!
  • I like my homemade blend for burger seasoning, but if you have a Burger Blend already in your spice cabinet you can use that instead.
  • All grills cook differently. I recommend checking the beef and veggies around 20 minutes and grilling them for an additional 5-10 minutes if they are not done. Beef should be cooked to 165 degrees F with an internal meat thermometer.
  • Be sure to wrap the foil packets up tightly in aluminum foil. This is key to getting the veggies tender.
