If you don't have any leftover bacon from breakfast, cook your bacon. I prefer to bake it on a sheet pan in the oven at 400 degrees F for about 25 minutes. Use parchment paper for easy clean up.
Next, prep your potatoes. Peel the potatoes, wash them, and cut them up into cubes.
Toss the potatoes with olive oil, salt, pepper, garlic powder, and paprika (I don’t use exact measurements for this part).
Cook potatoes in the air fryer at 400 degrees for about 20-25 minutes shaking them around at least a couple times while they cook.
Heat a skillet over medium high heat. Add the ground beef to the skillet with a chopped onion. Season with salt, pepper, ground mustard, onion powder, garlic powder, and smoked paprika. Once the beef is fully cooked, drain any extra grease. Add the minced garlic and bbq sauce. Stir well.
Once the potatoes and ground beef are cooked combine them together in the skillet and top with shredded Colby Jack cheese, cooked crumbled bacon, and some crispy fried onions. Put the skillet in the oven at 400 degrees F to melt the cheese.
Top with more BBQ sauce if desired. Enjoy!
