Blueberry Sausage Pancake Casserole

This is an easy and delicious pancake casserole made with blueberries, sausage, syrup, and pancake mix.

Ingredients

  • 4 cups pancake mix
  • 3 cups water
  • 1 lb breakfast sausage browned
  • 1 1/2 cups fresh blueberries
  • 1/3 cup maple syrup plus more for topping
  • Pats of butter for topping

Instructions

  • First, cook 1 lb of breakfast sausage. Drain the grease well.
  • In a large bowl mix together 4 cups of Pancake Mix with water following the directions on the box. Add the browned sausage, blueberries, and maple syrup. I like to keep a little bit of the sausage and blueberries separate to add to the top the breakfast casserole, but that is optional. Stir well.
  • Spray a 9x13 baking dish with cooking spray. Add the pancake mixture to the baking dish. Top with the reserved sausage and blueberries. Bake at 375 degrees F for about 45 minutes or until a toothpick comes out clean from the center of the pancake casserole.
  • Top a piece with a pat of butter and more maple syrup. Enjoy!

Notes

I used Patti's Good Life pancake mix which calls for 3 cups of water for 4 cups of pancake mix. I recommend mixing up 4 cups of pancake mix with water following the directions on the box of pancake mix you use!
