Preheat your oven to 400 degrees F.
You will need bacon for this recipe. Cook at least 4 pieces of bacon for this recipe. Drain well and chop into small pieces. Or you could use bacon bits, if you don't want to make bacon.
Heat a large skillet over medium-high heat. Brown 1 lb of ground beef with chopped onion. Season with salt, pepper, ground mustard, onion powder, garlic powder, and smoked paprika. Drain any extra grease from the meat.
Next, add the ketchup, mustard, and pickle juice. Stir well and remove from the heat.
Spray a 9x13 dish with cooking spray. Combine diced hash browns, ground beef, sour cream, condensed cheddar soup, 1 cup of shredded Colby Jack cheese. Mix together well and spread out evenly in the pan. Top with 1 more cup of shredded cheese and then bacon.
Bake at 400 degrees F covered with foil for 1 hour. Remove the foil and let cook for a couple more minutes to brown the cheese.
Top with chopped green onions. Serve with ketchup, pickles, or a homemade burger sauce. Enjoy!
