Brown 1 lb of ground beef in a large oven safe skillet over medium-high heat, add all seasonings, and the onion.
Let that cook until beef is cooked through and onions have softened. While the ground beef is cooking, cut 10 white corn tortillas into squares. Drain any grease from the skillet.
Add the minced garlic and the cut up white corn tortillas. Stir those around with the ground beef and add two cans of mild enchilada sauce. Add a handful of Chihuahua cheese and stir everything together well. Top with some shredded Colby Jack cheese.
Place this in the oven at 400 degrees F for about 5 minutes, or until the cheese is melted. Top the plates with cilantro and sour cream. Enjoy!
Notes
My family loves this recipe with ground beef, but you could use ground turkey or even 1 lb of chicken breast cut up into cubes instead.
I used white corn tortillas, but yellow corn tortillas could also be used in this recipe.
The Chihuahua cheese is a great melting cheese for dishes like this, but you could just use shredded Colby Jack or Monterey Jack cheese instead.
For crispy tortillas you could fry the corn tortillas before adding them to the skillet.
A taco seasoning packet could be used instead of the homemade blend of taco seasoning.
Top your plates with any of your favorite toppings. My family likes fresh cilantro and some sour cream.
