Cheesy Ground Beef Broccoli Rice Skillet

Ingredients

  • 1 lb ground beef
  • 1 chopped onion
  • 1/2 tsp each of salt, pepper, dried mustard
  • 1 tsp onion powder, garlic powder, Italian seasoning, and smoked paprika
  • 1 tbsp minced garlic
  • 1 tbsp Worcestershire sauce
  • 2 cups of beef broth
  • 1 cup jasmine rice rinsed
  • 2 cups chopped broccoli florets chopped
  • 1 1/2 cups shredded Colby Jack cheese
  • 1 tsp Dried parsley

Instructions

  • To start making this recipe, chop one onion. Roughly chop broccoli into smaller pieces (just be careful not to chop too small or it will completely fall apart while cooking).
  • Heat a large skillet over medium-high heat. Add the chopped onion and 1 lb of ground beef and spread it out evenly in pan.
  • Season with salt, pepper, mustard powder, onion powder, garlic powder, Italian seasoning, and paprika. Once the ground beef is browned remove any extra grease if needed.
  • Next, add the minced garlic and Worcestershire sauce. Add the rice, broccoli, and beef broth. Bring the whole skillet to a boil, once bubbling reduce the heat to medium-low, and cover with a lid.
  • Let cook covered for about 15-20 minutes or until the rice is cooked. Add about a cup of shredded Colby Jack cheese and stir.
  • Top with a little bit more cheese and cover with the lid to let the cheese melt or pop it in the oven under the broiler for just a few minutes. Enjoy!

  • I used 1 lb of ground beef, but this would be good with ground turkey!
  • You can add any extra seasonings you'd like to this recipe. Red pepper flakes would be good for some spice!
  • I like making these one-pan rice meals with Jasmine rice because it cooks well in about 20 minutes. If you use a different kind of rice, you may need to adjust the cooking time.
  • I use freshly shredded Colby Jack cheese, but this would be good with cheddar cheese or pepper jack cheese.
