Cheesy Hash Brown Breakfast Casserole

Cheesy Potatoes, sausage, gravy, eggs, and cornflakes make this easy and delicious breakfast casserole!

Ingredients

  • 2 lb bag of frozen southern style/diced hash browns
  • 1 lb breakfast sausage browned
  • 15 oz can of country sausage gravy
  • 2 cups of shredded cheddar cheese
  • Salt, pepper, garlic powder
  • 6 eggs whisked
  • 2 cups crushed corn flakes
  • 4 tbsp melted butter

Instructions

  • Brown 1 lb of breakfast sausage in a skillet. Drain grease when the sausage is fully cooked.
  • Spray a 9x13 smoker safe dish with cooking spray. Combine diced hash browns, browned sausage, country sausage gravy, 1 cup of shredded cheddar cheese, and season well with some salt, pepper, and garlic powder.
  • Stir everything together well and whisk together 6 eggs. Pour the eggs over the other ingredients in the pan. Top with 1 more cup of shredded cheddar cheese.
  • Crush about 2 cups of corn flakes and stir them together with 4 tbsp of melted butter. Pour the corn flakes over the breakfast casserole.
  • Smoke at 350 degrees F for about 1 hour and 10 minutes OR you can bake it in an oven. Bake at 350 degrees for about an hour or until potatoes are cooked through and tender.
  • Serve with ketchup or hot sauce. Enjoy!

Notes

This breakfast casserole can be prepped ahead of time—just wait to top with the cornflakes & butter until right before you bake it!
