Brown 1 lb of breakfast sausage in a skillet. Drain grease when the sausage is fully cooked.
Spray a 9x13 smoker safe dish with cooking spray. Combine diced hash browns, browned sausage, country sausage gravy, 1 cup of shredded cheddar cheese, and season well with some salt, pepper, and garlic powder.
Stir everything together well and whisk together 6 eggs. Pour the eggs over the other ingredients in the pan. Top with 1 more cup of shredded cheddar cheese.
Crush about 2 cups of corn flakes and stir them together with 4 tbsp of melted butter. Pour the corn flakes over the breakfast casserole.
Smoke at 350 degrees F for about 1 hour and 10 minutes OR you can bake it in an oven. Bake at 350 degrees for about an hour or until potatoes are cooked through and tender.
Serve with ketchup or hot sauce. Enjoy!
