Chili Cheese Dog Tater Tot Casserole

This Tater Tot Casserole is an easy one pan dinner that has all of the flavors of a chili cheese dog!

Ingredients

  • 1 lb of ground beef
  • 1 onion chopped
  • 1/2 tsp each of salt, pepper, ground cumin
  • 1 tsp each of onion powder and paprika
  • 2 tsp chili powder
  • 1 tbsp minced garlic
  • 4 hotdogs chopped
  • 10 oz can of Rotel drained
  • 15.5 oz can of chili beans
  • 3 tbsp tomato paste
  • 1 cup shredded Colby Jack cheese
  • 30 oz bag crispy crowns not all will be used
  • 2 green onions chopped
  • Mustard

Instructions

  • Heat a large skillet over medium-high heat and brown 1 lb of ground beef with chopped onion. Season with salt, pepper, cumin, paprika, chili powder, and onion powder. Once the beef is fully cooked, drain any extra grease from the skillet.
  • Add 1 tbsp of minced garlic and the cut up hot dogs. Stir everything together well. Add the can of drained Rotel, chili beans, and 3 tbsp of tomato paste. Stir everything together well and let simmer on the stove for a few minutes.
  • Top the chili cheese dog mixture with 1 cup of shredded Colby Jack cheese and the crispy crowns.
  • Bake in the oven at 400 degrees F for about 25 minutes. If you want the crispy crowns extra crispy you can broil the casserole for a few minutes! Top with chopped green onions.
  • Serve with mustard and enjoy!
