Heat a large skillet over medium-high heat and brown 1 lb of ground beef with chopped onion. Season with salt, pepper, cumin, paprika, chili powder, and onion powder. Once the beef is fully cooked, drain any extra grease from the skillet.
Add 1 tbsp of minced garlic and the cut up hot dogs. Stir everything together well. Add the can of drained Rotel, chili beans, and 3 tbsp of tomato paste. Stir everything together well and let simmer on the stove for a few minutes.
Top the chili cheese dog mixture with 1 cup of shredded Colby Jack cheese and the crispy crowns.
Bake in the oven at 400 degrees F for about 25 minutes. If you want the crispy crowns extra crispy you can broil the casserole for a few minutes! Top with chopped green onions.
Serve with mustard and enjoy!
