Scrub and wash potatoes. Cut the potatoes up into cubes and add them to a crockpot sprayed with cooking spray.
Add olive oil, salt, pepper, garlic powder, paprika, minced garlic, and a chopped red onion. Stir well.
Cut chicken into cubes and add to the crockpot on top of the potatoes.
Season with salt, pepper, paprika, onion powder, and red pepper flakes.
Add some BBQ sauce on top of the chicken. I just use enough BBQ sauce to cover the chicken.
Cook on low for at least 6 hours.
Top with shredded cheddar cheese and let sit until the cheese is melted.
Serve with chopped green onions on top and enjoy!
