Crockpot BBQ Chicken and Potatoes

  • 1 Crockpot

Ingredients

  • 5 small/medium russet potatoes
  • 1 TBSP olive oil
  • Salt, pepper, garlic powder, and paprika (for the potatoes I don’t use exact measurements)
  • 1 TBSP minced garlic
  • 1 chopped red onion
  • 1 lb chicken breast
  • 1/2 tsp each of salt and pepper
  • 1 tsp each of paprika and onion powder
  • 1/4 tsp red pepper flakes
  • BBQ sauce
  • 1 cup of shredded cheddar cheese
  • Green onions

Instructions

  • Scrub and wash potatoes. Cut the potatoes up into cubes and add them to a crockpot sprayed with cooking spray.
  • Add olive oil, salt, pepper, garlic powder, paprika, minced garlic, and a chopped red onion. Stir well.
  • Cut chicken into cubes and add to the crockpot on top of the potatoes.
  • Season with salt, pepper, paprika, onion powder, and red pepper flakes.
  • Add some BBQ sauce on top of the chicken. I just use enough BBQ sauce to cover the chicken.
  • Cook on low for at least 6 hours.
  • Top with shredded cheddar cheese and let sit until the cheese is melted.
  • Serve with chopped green onions on top and enjoy!
