Crockpot Cheesy Potatoes and Kielbasa

Ingredients

  • 24 oz bag baby potatoes, quartered OR a 28 oz bag of frozen Potatoes O'Brien
  • 2 (14 oz) packs Polska Kielbasa
  • 10 oz can of Cream of chicken soup
  • 1 ranch seasoning packet
  • 1 cup shredded Colby Jack cheese
  • 3 chopped green onions

Instructions

  • Slice one bag of baby potatoes (if using baby potatoes) in quarters. Slice the kielbasa into thin rounds.
  • Spray a crockpot with cooking spray and add the baby potatoes (or frozen potatoes) and kielbasa. Add 1 can of cream of chicken and 1 packet of ranch dressing seasoning. Stir everything together well.
  • Cook on low for 6-8 hours if you used baby potatoes. If you use the frozen potatoes it will cook on low for 4 hours.
  • Top with 1 cup of shredded Colby Jack cheese and let it sit in the crockpot for a few minutes until the cheese is melted. Add some chopped green onions. Enjoy!

  • If you want to use a 28 oz bag of frozen Potatoes O'Brien cook the recipe on low for 4 hours
  • I used 2 (14 oz) packs of Polska Kielbasa, but any of the varieties of kielbasa/smoked sausage would work in this recipe.
  • This recipe can be made with a 24 oz bag of baby potatoes OR a 28 oz bag of Potatoes O'Brien with peppers and onions. Just be sure to note the different cooking times!
  • I prefer this recipe with the baby potatoes, but if you don't want to cut the potatoes or want to make this recipe faster the frozen potatoes will save you some time!
  • A can of cream of soup helps give this dish a creamy consistency, you could use cream of chicken, mushroom, celery, or the condensed cheddar soup.
  • I like to shred Colby Jack cheese from a block of cheese for a better consistency when it melts.
  • This dish was not salty, but if you are trying to cut down on sodium you could skip the ranch seasoning packet and season well with pepper, garlic powder, onion powder, smoked paprika, and Italian seasoning. You could also use a low sodium/unsalted version of cream of chicken soup.
