If using russet potatoes, wash the potatoes and cut them up into small cubes. If using baby potatoes cut them into quarters.
Spray a crockpot with cooking spray.
Add the potatoes to the crockpot. Season with olive oil, salt, pepper, garlic powder, and paprika (I don’t use exact measurements for this part).
Add minced garlic and stir potatoes and seasonings well.
Cut 1 lb of chicken into cubes.
Season the chicken with 1/2 tsp each of salt and pepper, 1 tsp each of smoked paprika, onion powder, and Italian seasoning.
Add some Parmesan Garlic sauce on top of the chicken. I use just enough of the sauce to cover the chicken. You can always add more sauce if needed once everything is cooked.
Cook on low for about 6 hours or until potatoes are cooked to your liking.
Stir everything well.
Top with shredded mozzarella cheese and let it sit just until the cheese is melted!
Top the dish with dried parsley and Parmesan cheese. Enjoy!
