Cook Time: 6 hours

Cuisine: American
Keyword: Easy Crockpot Recipe, Garlic Parmesan Chicken and Potatoes
Servings: 6 people

Equipment

  • 1 Crockpot

Ingredients

  • 1 lb chicken breasts cut into cubes
  • 4-5 medium sized russet potatoes (cubed) OR 1 bag baby potatoes (quartered)
  • 2 tbsp olive oil
  • salt, pepper, garlic powder, paprika (for potatoes)
  • 1/2 tsp each of salt and pepper
  • 1 tsp each of smoked paprika, onion powder, and Italian seasoning
  • 2 tbsp minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce (just enough to cover chicken)
  • 1 cup of shredded mozzarella cheese
  • Dried parsley
  • Parmesan cheese

Instructions

  • If using russet potatoes, wash the potatoes and cut them up into small cubes. If using baby potatoes cut them into quarters.
  • Spray a crockpot with cooking spray.
  • Add the potatoes to the crockpot. Season with olive oil, salt, pepper, garlic powder, and paprika (I don’t use exact measurements for this part).
  • Add minced garlic and stir potatoes and seasonings well.
  • Cut 1 lb of chicken into cubes.
  • Season the chicken with 1/2 tsp each of salt and pepper, 1 tsp each of smoked paprika, onion powder, and Italian seasoning.
  • Add some Parmesan Garlic sauce on top of the chicken. I use just enough of the sauce to cover the chicken. You can always add more sauce if needed once everything is cooked.
  • Cook on low for about 6 hours or until potatoes are cooked to your liking.
  • Stir everything well.
  • Top with shredded mozzarella cheese and let it sit just until the cheese is melted!
  • Top the dish with dried parsley and Parmesan cheese. Enjoy!

Notes

  • Depending on the size of your potatoes, they may need additional time in the crockpot. All crockpots cook differently so adjust the cooking time as needed.
  • Russet potatoes cut into cubes or baby potatoes cut into quarters can be used in this recipe.
  • Use freshly minced garlic or jarred minced garlic for this recipe.
  • When seasoning your potatoes, I just eyeball this part. You may add as much as you would like.
  • Grate a block of mozzarella yourself for a creamier melted cheese.
  • Onions can be added to this dish for extra flavor and a bit of crunch.
  • I like using the Buffalo Wild Wing's brand Garlic Parmesan Sauce, but you can use your favorite or make a homemade version.
  • For the sauce I only add enough to cover the chicken. The sauce has a little bit of a kick to it and adding too much could make this a spicy dish. You can always add more sauce later if needed.
