Easy Crockpot Meatball Lasagna

Prep Time: 15 minutes
Cook Time: 6 hours
Course: Dinner
Cuisine: American
Keyword: Crockpot Meatball Lasagna
Servings: 8 people

Ingredients

  • 2 lbs frozen homemade or store-bought meatballs
  • 2 (24) oz jars marinara sauce
  • 1 tsp each garlic powder, onion powder, Italian seasoning
  • 1/4 tsp red pepper flakes
  • 16 oz box of lasagna noodles
  • 15 oz ricotta
  • 1 1/2 cups shredded mozzarella cheese
  • Parsley
  • Parmesan cheese

Instructions

  • Add your frozen homemade meatballs, 2 jars of marinara sauce, garlic powder, onion powder, Italian seasoning, and red pepper flakes to a crockpot. Stir and cook on low for 4-6 hours.
  • Use your hands to roughly break apart the lasagna noodles into smaller pieces. Cook 16 oz of lasagna noodles following the directions on the box.
  • Add the cooked pasta, 15 oz of ricotta cheese, and about 1 cup of shredded mozzarella cheese to the crockpot.
  • Stir well and top with a little bit more shredded mozzarella cheese. Cover with the lid and let it keep cooking for about 15 or so minutes, or until the cheese is melted. Top it with parsley and Parmesan cheese. Enjoy!

Notes

  • Any homemade or store-bought frozen meatballs would work in this recipe. I prefer to use my homemade meatball recipe and keep the meatballs in the freezer for easy recipes like this one.
  • I used 16 oz of regular lasagna noodles, but you could really use any pasta shape for this recipe.
  • If you don’t want to make this in a crockpot it could easily be cooked on the stove using a couple of pots instead.
  • I shred mozzarella cheese from a block of cheese for a better melting consistency.
