Easy Homemade Mashed Potatoes

This easy homemade mashed potato recipe is simple, but delicious!

Ingredients

  • 5 Russet potatoes
  • 1 stick (1/2 cup) of butter
  • 1/2 cup of sour cream
  • 1/2 cup of milk
  • 1/2 tsp each of salt and pepper
  • 1 tsp of garlic powder
  • 1 TBSP dried or fresh parsley plus more for topping

Instructions

  • Peel, wash, and chop potatoes into smaller pieces.
  • Add the chunks of potatoes to a pot. Cover the potatoes in water and place on the stove over high heat.
  • Boil the potatoes until they are fork tender.
  • Drain all of the water from the potatoes and place the pot of potatoes back on the hot burner, but make sure the heat is turned off.
  • Add the butter, milk, sour cream, salt, pepper, garlic powder, and parsley.
  • Use a potato masher to mash potatoes until you get the consistency you like. I use a potato masher, but for a smoother consistency you could use a hand mixer.
  • If the potatoes seem dry you could always add more milk or a few extra pats of butter if needed, but it's usually perfect!
  • Top with more dried or fresh parsley before serving.
