Peel, wash, and chop potatoes into smaller pieces.
Add the chunks of potatoes to a pot. Cover the potatoes in water and place on the stove over high heat.
Boil the potatoes until they are fork tender.
Drain all of the water from the potatoes and place the pot of potatoes back on the hot burner, but make sure the heat is turned off.
Add the butter, milk, sour cream, salt, pepper, garlic powder, and parsley.
Use a potato masher to mash potatoes until you get the consistency you like. I use a potato masher, but for a smoother consistency you could use a hand mixer.
If the potatoes seem dry you could always add more milk or a few extra pats of butter if needed, but it's usually perfect!
Top with more dried or fresh parsley before serving.
