Easy Slow Cooker Chicken & Dumplings

Chicken and Dumplings are a staple in my house in the fall and winter, but honestly they're so good for a hearty dinner anytime of year. The tortillas cut into strips are the real hack here and they are such a time saver. This is the way my dad always made them growing up and I still love them today!

Ingredients

  • 1 lb of chicken breasts
  • 1/2 tsp each of salt and pepper
  • 1 tsp each of onion powder garlic powder, and parsley flakes
  • 1 onion chopped
  • 2 stalks of celery chopped
  • 2 carrots chopped
  • 1 10 oz can of cream of chicken soup
  • 1 10 oz can of cream of celery soup
  • 3 cups of chicken broth
  • 5 medium-large sized flour tortillas
  • 1 TBSP of flour
  • Seasoning salt

Instructions

  • add chicken to a slow cooker and season with salt, pepper, onion powder, garlic powder, and parsley flakes
  • add onion, celery, carrots, cream of chicken soup, cream of celery soup, and chicken broth
  • cook on high for 4 hours or low for 6 hours
  • shred/cut up chicken
  • cut tortillas into smaller pieces and put them in a zip lock bag
  • shake tortillas in the bag with 1 TBSP of flour
  • pour tortillas and flour into the crockpot
  • let cook for about 30 minutes
  • I like to taste it once it’s cooked and add a little bit of seasoning salt if needed at the end
  • serve
