Garlic Parmesan Sheet Pan Chicken and Veggies

Ingredients

  • 1 lb chicken tenders
  • 1/2 cup Parmesan Garlic sauce (homemade or store-bought)
  • 14 oz kielbasa sliced
  • 1/2 lb Asparagus
  • 24 oz baby potatoes quartered
  • 1 tbsp baking soda
  • 1 tbsp Olive oil
  • 1 tsp each salt and pepper
  • 2 tsp each smoked paprika and garlic powder
  • 1/4 cup Parmesan cheese
  • 1 tsp Dried parsley

Instructions

  • Preheat oven to 400 degrees.
  • Wash potatoes and cut them into quarters. Boil a pot of water and add 1 tbsp of baking soda (slowly so it doesn't boil over). Add the potatoes to the boiling water. Boil for about 8 minutes or until the potatoes are almost fork tender. Drain potatoes.
  • In a small bowl, measure out your seasonings. Stir the seasonings together well.
  • Add the potatoes to a bowl with oil and season with about 1/3 of the seasoning blend. Toss potatoes until well coated.
  • Add potatoes to a sheet pan that has been sprayed with cooking spray.
  • Add washed/cut asparagus to the bowl with a little bit more oil and season with about 1/3 of the seasoning blend. Add the asparagus to the sheet pan.
  • Cut the kielbasa up into rounds and add to the sheet pan.
  • Add the chicken tenders to the bowl. Season the chicken with the rest of your seasoning blend. Add about 1/2 cup of Garlic Parmesan sauce. Use tongs to stir the chicken around well in the seasoning and sauce.
  • Finally, add the chicken to the sheet pan and bake at 400 degrees F for about 25 minutes.
  • Sometimes the chicken releases juice. Pour off any extra liquid and put the sheet pan back in the oven. Broil for just a few minutes if desired.
  • Top the chicken, potatoes, and asparagus with some Parmesan cheese and dried parsley. Enjoy!

  • Any seasonings can really be used in this recipe. I like to keep it simple with salt, pepper, garlic powder, and smoked paprika.
  • Any variations of kielbasa or smoked sausage will be good in this recipe! Use beef, pork, or even turkey kielbasa.
  • I used homemade Garlic Parmesan sauce, but you can use bottled Buffalo Wild Wing's sauce or any brand you like.
  • I like this combo of veggies, but this is a great meal to use up whatever vegetables you have in the fridge.
  • This cooked in my oven at 400 degrees for about 25 minutes, but all ovens cook differently and cooking time can vary.
  • If your chicken or vegetables releases liquid while cooking, carefully pour that off the pan into your sink. Place the sheet pan meal back in the oven for the last couple of minutes.
  • Always cook chicken until it reaches an internal temperature of at least 165 degrees.
  • For crispier potatoes/veggies you can spread this out between two large sheet pans instead of just one and stir a couple of times while it cooks.
