Ingredients

  • 5 small/medium potatoes
  • olive oil
  • salt, pepper, garlic powder, and paprika (for potatoes)
  • 1 lb chicken breasts cut into cubes
  • 1/2 tsp each of salt and pepper
  • 1 tsp each of smoked paprika, garlic powder, and onion powder
  • 1 tbsp minced garlic
  • 1/2 cup of Buffalo Wild Wings Honey BBQ sauce
  • 1 cup shredded mozzarella cheese
  • 2 green onions chopped

Instructions

  • Peel, wash potatoes, and cut up into cubes.
  • Toss the potatoes in a large bowl with olive oil, salt, pepper, garlic powder, and paprika (I don’t use exact measurements for this part).
  • Heat a griddle over medium-high heat and add the potatoes to the griddle. Add more oil as needed and continue flipping the potatoes/stirring as they cook. My potatoes cooked for about 20 minutes.
  • While the potatoes are cooking, add some cubed up chicken to the bowl. Season the chicken with 1/2 tsp each of salt and pepper, 1 tsp each of smoked paprika, garlic powder, and onion powder.
  • Add the chicken to the other side of the griddle over medium heat. Add some oil to the chicken if needed. Once chicken is finished cooking add the minced garlic and about 1/2 cup of BBQ sauce. Stir together well and turn the heat off that side of the griddle.
  • Top the cooked potatoes with the BBQ chicken. Add the shredded mozzarella cheese and cover with a griddle dome for just a few minutes to melt the cheese.
  • Once the cheese is melted, top with chopped green onions. Enjoy!
