Grilled Chicken Taco Thighs
Grilled Taco Chicken Thighs are made with simple ingredients and can be grilled on a gas grill or an outdoor griddle. The chicken can be eaten as is or made into fajitas, tacos, rice bowls, or quesadillas.

Ingredients

  • 2 1/2 lbs boneless skinless chicken thighs
  • 1-2 tbsp oil
  • 1 tsp each salt and pepper
  • 2 tsp each cumin, dried cilantro, garlic powder, and onion powder
  • 4 tsp chili powder
  • 1 lime juiced
  • Fresh cilantro

Instructions

  • Add about 2 1/2 lbs of boneless skinlesss chicken thighs to a bowl and add 1-2 tbsp of olive oil (or any oil you have on hand).
  • Season with salt, pepper, cumin, dried cilantro, garlic powder, onion powder, and chili powder. Add the juice of one lime and stir everything together well until the chicken is well coated in seasoning.
  • I like to let this sit in the marinate for at least 15 minutes, but if you have more time it’s only going to add more flavor! You can let it marinate in the refrigerator for up to about 2 hours.
  • Preheat your gas grill or outdoor griddle to medium-high heat and cook seasoned chicken for about 6-7 minutes per side.
  • Once they have a nice char and reach an internal temp at around 185 degrees F, top the chicken with fresh cilantro and a spritz of fresh lime juice (optional) for added freshness.
  • The Grilled Taco Thighs can be eat as is or be used to make fajitas, tacos, rice bowls, or even quesadillas.

Notes

  • I cook chicken thighs until they reach an internal temperature of at least 185 degrees F. This helps the fat render, but they are technically fully cooked at 165 degrees F.
  • I like using my homemade blend for taco seasoning, but you could use some taco seasoning packets if you are short on time.
