Grinder Salad Sandwiches

This easy sandwich recipe is perfect for a busy weeknight and take sandwich night at home to a whole new level!

Ingredients

  • Hoagie Rolls
  • Ham
  • Salami
  • Pepperoni
  • Provolone
  • 1/2 cup of mayo
  • 2 tbsp of red wine vinegar
  • 1/2 tsp of salt and pepper
  • 1 tsp of dried oregano, Italian seasoning, and garlic powder
  • 1/2 tsp of red pepper flakes
  • 1/3 cup pepperoncinis peppers or banana peppers drained
  • 1/3 cup of shredded Parmesan cheese
  • 8 oz shredded iceberg lettuce
  • 1/2 of a red onion thinly sliced
  • 1 tomato sliced

Instructions

  • Preheat oven to 400 degrees F. Layout bread and top with lunch meat of your choice. I used ham, salami, and pepperoni.
  • Use as much or as little meat on the sandwiches as you like. Top with a couple of slices of provolone cheese. Bake for a few minutes until the cheese is melted.
  • In a large bowl, mix together mayo, red wine vinegar, salt, oregano, Italian seasoning, garlic powder, and red pepper flakes. Stir well.
  • Add pepperoncinis peppers or banana pepper rings, 1/3 cup Parmesan cheese, 1/2 a sliced red onion, and shredded lettuce. Stir everything together well.
  • Once the cheese is melted and the sandwiches are hot, top them with more Parmesan cheese. Add slices of tomato that have been seasoned with salt and pepper. Top sandwiches with the grinder salad mixture. Enjoy!
