Cook Bacon. Cut the chicken breasts in half lengthwise to make them thinner. Season with a little bit of salt, pepper, garlic powder, and smoked paprika on both sides.
Heat a skillet with 2 TBSP of butter and quickly sear chicken in the skillet on both sides. This won’t fully cook the chicken. Remove the skillet from the heat and brush on some of the BBQ sauce on top of each piece of chicken.
Bake in the oven at 400 degrees for about 10-12 minutes or until it reaches an internal temp of 165 degrees. While the chicken finishes cooking, melt 1 tbsp of butter in a skillet and toast the buns.
Top cooked chicken with cheddar cheese and put back in the oven if needed to melt the cheese.
Build sandwiches by adding chicken, bacon, lettuce, and sliced red onion to the buns.
Enjoy! This recipe made four sandwiches, but you could easily use more chicken to make as many sandwiches as you need.
