Butterfly cut chicken breasts to make them thinner.
Season with salt, pepper, garlic powder, Italian seasoning, and paprika on both sides.
Heat a skillet with 2 TBSP of butter over medium high heat and quickly sear chicken (about 2-3 min on each side) in the skillet. This won’t fully cook the chicken.
Remove the skillet from the heat and add a good spoonful of marinara on top of each piece of chicken.
Top with sliced or shredded mozzarella cheese.
Bake in the oven at 400 degrees for about 10 minutes or until it reaches an internal temp of 165 degrees.
While the chicken finishes cooking in the oven, combine 4 TBSP butter, 1 TBSP minced garlic, and some fresh chopped parsley in a bowl. Stir together well.
Spread the butter mixture on the buns and toast them in a skillet over medium heat until golden brown.
Build sandwiches and top with more parsley.
Enjoy! This recipe made four sandwiches, but you could easily use more chicken to make as many sandwiches as you need.
