Heat a large skillet over medium-high heat. Brown 1 lb of ground beef with chopped onion. Season with salt, pepper, ground mustard, onion powder, garlic powder, and smoked paprika, Drain any extra grease from the meat.
Next, add the minced garlic, ketchup, mustard, and pickle juice. Stir well. Add the uncooked (rinsed) rice, beef broth, and the can of tomato sauce to the skillet. Stir well.
Bring the whole skillet to a quick boil then turn the heat down to medium-low. Cover with a lid and cook for about 15-20 minutes, or until your rice is cooked.
Once the rice is cooked add about 1 cup of cheese, stir, and top with a little bit more. Let sit until the cheese melts or pop it in the oven under broil for just a minute. Top with chopped green onions. Enjoy! Let me know if you try it out!
