One Pan Cheeseburger Rice
This is a super easy and delicious one pan meal that is perfect for a busy weeknight!

One Pan Cheeseburger Rice

Ingredients

  • 1 lb ground beef
  • 1 onion chopped
  • 1/2 tsp each of salt, pepper, ground mustard
  • 1 tsp each of onion powder, garlic powder, and smoked paprika
  • 1 tbsp minced garlic
  • 2 tbsp ketchup
  • 2 tbsp mustard
  • 2 tbsp dill pickle juice
  • 1 1/2 cups of beef broth
  • 1 cup jasmine rice rinsed
  • 8 oz can of tomato sauce
  • 1 1/2 cups of shredded Colby Jack cheese
  • 2 green onions chopped

Instructions

  • Heat a large skillet over medium-high heat. Brown 1 lb of ground beef with chopped onion. Season with salt, pepper, ground mustard, onion powder, garlic powder, and smoked paprika, Drain any extra grease from the meat.
  • Next, add the minced garlic, ketchup, mustard, and pickle juice. Stir well. Add the uncooked (rinsed) rice, beef broth, and the can of tomato sauce to the skillet. Stir well.
  • Bring the whole skillet to a quick boil then turn the heat down to medium-low. Cover with a lid and cook for about 15-20 minutes, or until your rice is cooked.
  • Once the rice is cooked add about 1 cup of cheese, stir, and top with a little bit more. Let sit until the cheese melts or pop it in the oven under broil for just a minute. Top with chopped green onions. Enjoy! Let me know if you try it out!

Notes

  • My family prefers ground beef, but you could make this recipe with ground turkey instead.
  • Beef or chicken broth will work in this recipe.
  • I prefer to use Jasmine Rice because I have found it cooks quicker in one pan meals. If you use regular white rice it may need to cook a little bit longer or need more liquid.
  • Add some leftover bacon from breakfast if you have some in your refrigerator!
  • The ketchup, mustard, and dill pickle juice really gives this dish the cheeseburger flavors.
  • I used Colby Jack cheese from a block, but you could use shredded cheddar cheese.
