First, cook 1 lb of breakfast sausage and 1 lb of bacon. Drain the grease well from both and chop the bacon into small pieces.
In a large bowl mix together 4 cups of just add water Pancake Mix with water following the directions on the box of your pancake mix.
Add the shredded cheese, bacon, sausage, and maple syrup. I like to keep a little bit of the cheese, bacon, and sausage separate to add to the top the breakfast casserole, but that is optional. Stir well.
Spray a 9x13 baking dish with cooking spray. Add the pancake mixture to the baking dish. Top with the reserved cheese, bacon, and sausage. Bake at 375 degrees F for about 35 minutes or until a toothpick comes out clean from the center of the pancake casserole.
Brush the pancake breakfast casserole with a little bit of melted butter if desired! Top a piece with more maple syrup and enjoy!
Notes
I used Patti's Good Life Butter Milk Pancake Mix for this recipe, but any just add water pancake mix (or homemade) will work! Just be sure to mix 4 cups of pancake mix with water following the directions on your pancake mix.
