Parmesan Garlic Pork Tenderloin Sheet Pan Dinner
This sheet pan meal is easy to make and so good! It's made with juicy pork tenderloin, roasted veggies, and topped with garlic butter!

Parmesan Garlic Pork Tenderloin Sheet Pan Dinner

Ingredients

  • 2 lb pork loin filet Garlic & Herb
  • 1 onion chopped
  • 1 bag baby potatoes quartered
  • 1/2 bag baby carrots sliced in half
  • 1/2 tsp each salt and pepper
  • 1 tsp each smoked paprika, Italian seasoning, garlic powder
  • 12 oz broccoli florets chopped into bite-sized pieces
  • 3 tbsp butter
  • 2 tbsp minced garlic
  • 1 tbsp parsley
  • 1/2 cup freshly shredded Parmesan cheese

Instructions

  • Preheat your oven to 400 degrees F.
  • Slice baby potatoes in quarters, slice baby carrots in half, and chop an onion.
  • Add the vegetables to a sheet pan with 1 tbsp olive oil and season with salt, pepper, smoked paprika, Italian seasoning, and garlic powder. Stir veggies until well coated in oil and seasonings.
  • Move the veggies from the center of the sheet pan and add the Garlic and Herb pork tenderloin directly to the pan. Add a little drizzle of olive oil to the top of the pork to help with browning.
  • Bake at 400 degrees F for 45-50 minutes. If adding broccoli, take the sheet pan out of the oven about half way through cooking and stir broccoli into the veggies.
  • After adding the broccoli, bake the sheet pan meal for the remainder of the 45-50 minutes or until the pork reaches a temperature of at least 145 degrees F with an internal meat thermometer.
  • Melt butter and stir in minced garlic and parsley. Take the sheet pan out of the oven, brush it with the garlic butter and add about half of the Parmesan cheese. Place the sheet pan dinner back in the oven for just a couple of minutes.
  • Serve sheet pan meal with remaining Parmesan cheese. Allow pork to rest for a couple of minutes. Slice the tenderloin with a knife into thin pieces and serve alongside the vegetables.Enjoy!

  • I used a 2 lb Garlic and Herb marinated pork tenderloin. If you use a smaller or larger pork tenderloin, you may need to adjust the cook time.
  • If you can't find a Garlic and Herb pork tenderloin, choose one that sounds like it would go the best with the Parmesan Garlic flavor!
  • I like using baby potatoes for this recipe because they can be cut quickly, you could use a couple of russet potatoes, but be sure to cut them into small uniform pieces, so they cook evenly.
  • Adding the broccoli to the sheet pan meal about half way through cooking will help it not be overcooked.
  • The carrots turn out tender, but with a little bit of bite to them. If you want more tender carrots slice them even thinner or you could parboil them before adding them to the sheet pan.
  • Be sure not to overly crowd your sheet pan so all of the vegetables roast well.
