Equipment

  • 1 Stove/Oven

Ingredients

  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 1 tsp each of onion powder and smoked paprika
  • 1 lb chicken breast

Marinade

  • 1/2 cup low sodium soy sauce
  • 1 TBSP lemon juice
  • 1 TBSP Worcestershire sauce
  • 1 TBSP Olive oil
  • 1 1/2 TBSP minced garlic

Toppings

  • 4 tbsp of butter
  • 1 onion sliced
  • 8 oz container of mushrooms sliced
  • 4 slices Swiss cheese
  • 4 buns
  • Mayo (for buns)

Instructions

  • Season your chicken on both sides with salt, pepper, onion powder and smoked paprika.
  • Mix together your marinade and pour it over the chicken. That goes into the fridge for a couple hours, or until you lose patience.
  • Get your skillet over medium heat and add in a tablespoon of butter to cook your sliced onion and mushrooms in. Season the onions and mushrooms with salt, pepper, and garlic powder. Let that cook until they are cooked down. Remove them from the pan and set aside.
  • Melt the remaining two tablespoons of butter and cook your chicken until golden brown and to an internal temp of 165 degrees.
  • Top the cooked chicken with your mushrooms, onions, and a slice of Swiss cheese.
  • Place the skillet over smothered chicken in the oven at 400 degrees just until the cheese is melted.
  • Eat smothered chicken as is or put on toasted buns to make sandwiches! Enjoy!
