Preheat oven to 350° F. Add strawberry cake mix, 2 whisked eggs, and oil to a bowl and stir well. This will be thick, so it might take a little bit to get it all incorporated.

Use a cookie scoop to scoop out cookies onto a baking sheet lined with parchment paper. Bake for about 12 minutes.

Let cookies cool for 5-10 minutes then spread frosting on top. Top with the Funfetti sprinkles. Overall these cookies stay pretty soft, but as they cool they will start to set up. Enjoy!
