Crockpot Jalapeño Crack Chicken Sandwiches are super easy to make and delicious!

Easy crockpot recipes are always a win at my house, and these didn’t disappoint! If you’ve had crack chicken sandwiches this is pretty much the same recipe, but with the added spice and flavor of jalapeños!

  • Chicken breast
  • Salt, pepper, paprika, onion powder, and ranch seasoning

Make Crockpot Jalapeño Crack Chicken Sandwiches

To start making this super easy recipe, spray a crockpot with cooking spray and add 1 lb of chicken breasts.

Next, season the chicken with salt, pepper, paprika, onion powder, and ranch seasoning.

The last thing you need to add to the slow cooker is 1 tbsp of minced garlic, some pickled jalapeños, and a little bit of chicken broth.

Cook on low for 4-6 hours. Towards the end of the 4-6 hours you will need to cook some bacon however you prefer. I like to bake bacon in the oven at 400 degrees F for about 25 minutes. For easy clean up line the sheet pan with some parchment paper.

Once chicken is cooked shred the chicken with two forks or a hand mixer. There is no need to drain any extra liquid from the crockpot. The cheese will thicken the mixture.

Next, add a block of cream cheese, some shredded cheddar cheese, and the chopped bacon.

Let this keep cooking on low until the cream cheese is melted and stir everything together well.

While the cream cheese is melting, spread some butter or mayo on the buns and toast them in a skillet over medium heat.

Toast the buns until they are golden brown and set aside.

This next step is totally optional, but if you want to make it look fancy you can top the crack chicken mixture with a little extra shredded cheese, bacon, and some fresh jalapeños.

Once everything is ready, build the sandwiches on toasted buns. If you can handle the heat add some fresh sliced jalapeños to the sandwiches.

I served this with an easy salad kit, but it would also be good with fries, tater tots, or any kind of vegetable your family will eat!

Honestly the fresh jalapeños are completely optional they just add some freshness to the dish and definitely some extra heat.

You will love this recipe because it’s easy, pretty quick to throw in the crockpot, and the sandwiches are so good! My family didn’t think the sandwiches were super spicy with just the pickled jalapeños.

  • The fresh jalapeños are completely optional in this recipe. They just add some freshness to the dish and definitely some extra heat. If you don’t want the extra heat leave them out!
  • I used freshly shredded cheddar cheese for this recipe, but you could also use Colby Jack.
  • I like to cook bacon in the oven at 400 degrees F on a sheet pan lined with parchment paper for about 25 minutes or until it is cooked to your liking.
  • Leftovers reheat well for sandwiches or even quesadillas.
  • Brioche buns are my favorite type of bun, but you can use any buns you like.

Notes

This recipe makes at least 6-8 sandwiches depending on how much crack chicken you put on each sandwich.
