Add bite size potatoes to a bowl and drizzle them with a little bit of olive oil. Season with some salt and toss potatoes until they are well coated. Bake in the oven at 400 degrees for about 30-40 minutes or until your potatoes are fork tender (cooking time depends on how small the potatoes are).
Carefully slice open each potato and add a little pinch of shredded cheese. Top each one with some chopped bacon. Pop back in the oven to melt the cheese if needed.
Top baby baked potatoes with some chopped green onions. Serve with French Onion Dip, Sour Cream, or Ranch. You could even add the dip to a piping bag or zip lock bag and drizzle it over the potatoes! Enjoy!
