Baby Baked Potatoes
These baby baked potatoes are easy to make and delicious! They are perfect for an easy game day appetizer or as a side dish! I served them with some french onion dip, but they are also awesome with sour cream or some ranch dressing!

Ingredients
- 24 oz bite size potatoes
- Olive oil
- Salt
- Shredded cheddar cheese
- 4 strips of cooked bacon
- French Onion Dip or Sour Cream
- Green onions
Make Baby Baked Potatoes
Add bite size potatoes to a bowl and drizzle them with a little bit of olive oil. Season with some salt and toss potatoes until they are well coated.
Bake in the oven at 400 degrees for about 30-40 minutes or until your potatoes are fork tender. Cooking time really depends on how small the potatoes are.
I recommend checking them around 30-35 minutes and cooking longer if needed.
Once the potatoes are tender, carefully slice open each potato and add a little pinch of shredded cheese. Top each one with some chopped bacon.
Pop back in the oven to melt the cheese if needed.
Serve Baby Baked Potatoes
Once the cheese is melted, top the baby baked potatoes with some chopped green onions.
Serve with French Onion dip, some Sour Cream, or even some Ranch! You could even add the dip to a piping bag or zip lock bag and drizzle it over the potatoes!
