Cut the chicken into cubes and add it to a bowl. Season the chicken with salt, pepper, garlic powder, paprika, and red pepper flakes.
Add 1/2 cup of BBQ sauce to the chicken and mix until the chicken is well coated in seasoning and sauce.
Lay out a couple of pieces of aluminum foil. Add the cut potatoes and chopped onion. Drizzle with a little bit of olive oil. Season with some salt, pepper, and garlic powder. Top with the chicken.
Tightly wrap up aluminum foil packets. Cook foil packets on a grill over medium high heat for about 20 minutes or until the potatoes and chicken are cooked.
Once the chicken reaches an internal temp of 165 degrees F and the potatoes are tender carefully open the foil packets and add a handful of shredded cheddar cheese to the top of each foil packet.
Place them back on the grill for a couple of minutes until the cheese melts. Top each one with more BBQ sauce and chopped green onions. Enjoy!
