BBQ Chicken Potato Foil Packets

These BBQ Chicken Potato Foil Packets are easy to make and so good!

Ingredients

  • 1 lb chicken breast
  • 1/2 tsp each salt and pepper
  • 1 tsp each garlic powder and smoked paprika
  • 1/4 tsp red pepper flakes
  • Buffalo Wild Wing's Honey BBQ sauce
  • 24 oz baby potatoes halved
  • 1 chopped onion
  • 1-2 TBSP olive oil
  • Salt, pepper, garlic powder
  • Shredded cheddar cheese
  • Chopped green onions

Instructions

  • Cut the chicken into cubes and add it to a bowl. Season the chicken with salt, pepper, garlic powder, paprika, and red pepper flakes.
  • Add 1/2 cup of BBQ sauce to the chicken and mix until the chicken is well coated in seasoning and sauce.
  • Lay out a couple of pieces of aluminum foil. Add the cut potatoes and chopped onion. Drizzle with a little bit of olive oil. Season with some salt, pepper, and garlic powder. Top with the chicken.
  • Tightly wrap up aluminum foil packets. Cook foil packets on a grill over medium high heat for about 20 minutes or until the potatoes and chicken are cooked.
  • Once the chicken reaches an internal temp of 165 degrees F and the potatoes are tender carefully open the foil packets and add a handful of shredded cheddar cheese to the top of each foil packet.
  • Place them back on the grill for a couple of minutes until the cheese melts. Top each one with more BBQ sauce and chopped green onions. Enjoy!
