Make BBQ Chicken Foil Packets
To start making this recipe, cut the chicken into cubes and add it to a bowl.
Season the chicken with salt, pepper, garlic powder, paprika, and red pepper flakes.
Add 1/2 cup of Buffalo Wild Wings Honey BBQ Sauce to the chicken and mix until the chicken is well coated in seasoning and sauce.
Lay out a couple of pieces of aluminum foil. Add the cut potatoes and chopped onion. Drizzle with a little bit of olive oil. Season with some salt, pepper, and garlic powder.
Top with the chicken. Tightly wrap up aluminum foil packets.
Cook foil packets on a grill over medium high heat for about 20 minutes or until the potatoes and chicken are cooked.
I feel like the key to getting the potatoes to cook in he same amount of time is wrapping the foil packets tightly in the foil.
Once the chicken reaches an internal temp of 165 degrees F and the potatoes are tender carefully open the foil packets and add a handful of cheddar cheese to the top of each foil packet.
Place them back on the grill for a couple of minutes until the cheese melts.
Serve Foil Packets
Once the cheese is melted, top each one with more BBQ sauce and chopped green onions. I also like to serve these with some ranch dressing for dipping.
I served this with an easy chopped salad kit and the whole meal was a hit with the family.
