Peel, wash potatoes, and cut them up into small bite-sized cubes.
Toss with olive oil, salt, pepper, garlic powder, and smoked paprika.
Cook potatoes in the air fryer at 400 degrees F for about 20-25 minutes shaking them around at least a couple times while they cook.
Once potatoes are cooking, cut 1 lb of chicken into cubes. Cook the chicken in a skillet over medium-high heat with 2 tbsp of butter.
Season chicken with 1/2 tsp each of salt and pepper, 1 tsp each of paprika, ranch seasoning, and onion powder. Stir the chicken while it cooks.
Once chicken is finished cooking add the minced garlic and about 1/2 cup of BBQ sauce.
Add the crispy potatoes to the skillet and stir everything together. Top with shredded mozzarella cheese.
Broil in the oven for just a few minutes to melt the cheese (you could also cover with a lid and let this sit on the stove until cheese melts).
Top with a little bit more BBQ sauce (about 1/4 cup) and dried parsley. Enjoy!
