BBQ Chicken Potato Skillet

BBQ Chicken and Potato Skillet is truly a 30 minute prep to table meal!  If you need a quick, hearty weeknight meal that the whole family will love, this is the one for you! Healthy chicken is combined with diced potatoes and cheese.  Add your favorite barbecue sauce to make it your family’s new favorite weeknight dinner.

Ingredients

  • 2 chicken breasts
  • 5 small/medium potatoes
  • olive oil + salt, pepper, garlic powder, and paprika (for potatoes)
  • 1/2 tsp each of salt and pepper
  • 1 tsp each of paprika, ranch seasoning, and onion powder
  • 2 TBSP butter
  • 1 TBSP minced garlic
  • 1/2 cup of BBQ sauce
  • 1 cup of shredded mozzarella cheese

Prep BBQ Chicken and Potato Skillet

This recipe requires very little advanced prep.  Start by gathering all ingridents needed for the recipe and measuring out seasonings.

You can peel the potatoes ahead of time if you don’t like the peel, but it is not necessary.  The potatoes cook easily in the air fryer with or without the peel. 

Make BBQ Chicken and Potato Skillet

First, dice the potatoes into small cubes and add them to a large bowl. Add olive, salt, pepper, and paprika to the potatoes.

Seasoned potatoes

I don’t usually measure the seasonings for this step, so just season to your personal taste. Toss or stir the potatoes and seasonings together well.

Place in the airfryer at 400 for about 20 minutes.  I tossed the basket at least once midway through.

While potatoes are cooking, add the butter to the skillet on low, dice up the chicken and add to the skillet. Season with salt, pepper, paprika, onion powder, and ranch seasoning.

Cook the chicken on medium high heat until it won’t kill anybody (no pink/165 degrees).  I add the minced garlic to the skillet when the chicken is about halfway cooked so the garlic won’t burn.  

Once the chicken is cooked through, add the barbecue sauce of your choice, top with cooked potatoes and mix together. 

I usually like to use Sweet Baby Ray’s Original BBQ Sauce, but you can use your favorite bbq sauce for this recipe. I used about 1/2 cup for this step.

Last, top with shredded cheese and broil in the oven until the cheese is melted (2-3 minutes).  You can also just put the lid on the skillet and let the steam melt the cheese (this is useful if your skillet isn’t oven safe).

Once the cheese is melted, you can top with just a little bit more bbq sauce if desired!

Serve the Dish

To serve the BBQ Chicken and Potato Skillet you can add some chopped green onions if you have them! We always try to have some kind of vegetable with dinner, so I like serving this with salad, roasted broccoli, green beans, or some frozen mixed veggies.

Tips and Frequently Asked Questions

  • I’ve used cheddar cheese, mozzarella, and Monterey Jack cheese in this recipe, and all are tasty and melt well.  
  • I use regular paprika (sometimes called sweet) that is sold in grocery stores. Keep this on hand because it is mild and adds flavor to many dishes.
  • If you don’t have an air fryer, you can roast the potatoes in the oven.  Use the same cook temp but allow for a few extra minutes to make sure the potatoes are cooked through.  It also helps to stir/flip the potatoes half way through cooking.
  • I’ve made serveral variations of this chicken and potato skillet. If you aren’t a fan of BBQ sauce you could use buffalo sauce, garlic Parmesan sauce, or honey mustard!
  • Be sure to cut the potatoes on the smaller side and try to cut them all the same side so the potatoes cook evenly.

Ingredients

Instructions

  • Peel, wash potatoes, and cut up into cubes.
  • Toss with olive oil, salt, pepper, garlic powder, and paprika (I don’t use exact measurements for this part).
  • Cook potatoes in the air fryer at 400 degrees for about 20-25 minutes shaking them around at least a couple times while they cook.
  • Once potatoes are cooking, cut chicken into cubes. Cook chicken in a skillet on medium high heat with a little butter.
  • Season chicken with 1/2 tsp each of salt and pepper, 1 tsp each of paprika, ranch seasoning, and onion powder. Once chicken is finished cooking add the minced garlic and about 1/2 cup of BBQ sauce.
  • Add cooked potatoes to the skillet and stir everything together. Top with shredded cheese.
  • Broil in the oven for just a few minutes to melt the cheese (you could also cover with a lid and let this sit on the stove until cheese melts).
  • Top with a little bit more BBQ sauce and enjoy!

    This recipe can be modified by cutting and seasoning the potatoes and pan frying in olive oil, then finish with time in the microwave. Once cooked through, I added the the cooked chicken and mozzarella cheese – you can finish in the oven on broil or just a few minutes in the skillet covered for a few minutes to allow the cheese to melt.
    I added extra chopped garlic and chopped scallions – YUM!
