BBQ Chicken Sheet Pan Meal

Ingredients

  • 1 lb chicken tenders
  • BBQ sauce
  • Asparagus
  • 24 oz baby potatoes
  • 1 tbsp baking soda
  • Olive oil
  • Salt, pepper, garlic powder, paprika
  • Shredded cheddar cheese
  • Chopped green onions

Instructions

  • Preheat the oven to 400 degrees. Line a sheet pan with Aluminum Foil or Parchment Paper for easy clean up.
  • Wash potatoes and cut them into quarters. Boil a pot of water and add 1 tbsp of baking soda (slowly so it doesn’t boil over). Add the potatoes to the boiling water. Boil for about 8 minutes or until the potatoes are almost fork tender. Drain potatoes.
  • Add the potatoes to a bowl and season with a little bit of olive oil, salt, pepper, garlic powder, and paprika. Toss potatoes until well coated.
  • Add potatoes to a sheet pan.
  • Add washed/cut asparagus to the bowl and season with a little bit more of the same seasonings. Add asparagus to the sheet pan.
  • Season chicken with salt, pepper, garlic powder, and paprika. Add some BBQ sauce and make sure chicken is well coated. Add to the sheet pan. Bake at 400 degrees for about 25 minutes.
  • Add some shredded cheddar cheese to the potatoes. Brush a little bit more BBQ sauce over the chicken and broil for just a few minutes. Top potatoes with some green onions. Enjoy!
