Ingredients

Cheeseburger Baked Potatoes

  • 4 large russet potatoes
  • 1 tbsp oil
  • Salt
  • 6 pieces bacon cooked and chopped (or bacon bits)
  • 1 lb ground beef
  • 1 onion chopped
  • 1/2 tsp each of salt, pepper, ground mustard
  • 1 tsp each of onion powder, garlic powder, and smoked paprika
  • 1 tbsp minced garlic
  • 2 tbsp ketchup
  • 2 tbsp mustard
  • 2 tbsp pickle juice
  • 8 oz Colby Jack cheese shredded
  • 2 green onions chopped

Homemade Burger Sauce

  • 1/2 cup mayo
  • 1/4 cup ketchup
  • 2 tbsp mustard

Instructions

  • Scrub and wash four large russet potatoes. Dry the potatoes. Poke holes in them and cover them in olive oil and salt. Cook them in the oven for about 1 hour or until soft.
  • If you are not using bacon bits for this recipe, cook 6 pieces of bacon. I prefer to bake bacon on a sheet pan in the oven at 400 degrees F for 20-25 minutes. Drain grease and chop. Set aside.
  • When the potatoes have about 15 minutes left to cook, heat a large skillet over medium-high heat. Brown 1 lb of ground beef with chopped onion. Season with salt, pepper, ground mustard, onion powder, garlic powder, and smoked paprika, Drain any extra grease from the meat.
  • Next, add the minced garlic, ketchup, mustard, and pickle juice. Stir well.
  • Make the quick burger sauce by mixing together mayo, ketchup, and mustard.
  • Build your potatoes with shredded Colby Jack Cheese, the ground beef mixture, more cheese, burger sauce, bacon, and green onions! Add any of your favorite burger toppings! Enjoy!

Notes

  • I used ground beef in this recipe, but you could use ground turkey instead for a more budget-friendly or healthier option.
  • Shredded cheddar or pepper jack cheese could be used in place of the Colby Jack.
  • Russet potatoes work well for this recipe because they get nice and fluffy once baked. I find that the large russet potatoes from Sam's club make awesome stuffed potatoes!
  • Be sure to dry your potatoes well after washing them. Season them with salt and oil before baking to get the skins crispy.
  • Don't overcook the beef mixture, so it doesn't dry out.
  • Top this recipe with any of your favorite burger toppings! I like shredded cheese, bacon, green onions, and burger sauce.
  • This recipe makes 4 large baked potatoes.
