Scrub and wash four large russet potatoes. Dry the potatoes. Poke holes in them and cover them in olive oil and salt. Cook them in the oven for about 1 hour or until soft.
If you are not using bacon bits for this recipe, cook 6 pieces of bacon. I prefer to bake bacon on a sheet pan in the oven at 400 degrees F for 20-25 minutes. Drain grease and chop. Set aside.
When the potatoes have about 15 minutes left to cook, heat a large skillet over medium-high heat. Brown 1 lb of ground beef with chopped onion. Season with salt, pepper, ground mustard, onion powder, garlic powder, and smoked paprika, Drain any extra grease from the meat.
Next, add the minced garlic, ketchup, mustard, and pickle juice. Stir well.
Make the quick burger sauce by mixing together mayo, ketchup, and mustard.
Build your potatoes with shredded Colby Jack Cheese, the ground beef mixture, more cheese, burger sauce, bacon, and green onions! Add any of your favorite burger toppings! Enjoy!
