This easy ground beef recipe is made with ingredients you probably already keep stocked in your refrigerator and pantry.

Cheeseburger Baked potatoes are a great way to stretch a pound of ground beef and is a meal the whole family might actually eat since everyone can easily build their potatoes with the ingredients they love!

Make Loaded Baked Potatoes

To start making this easy weeknight dinner, get your potatoes cooking first.

I like to use russet potatoes for this recipe because I always keep them on hand and they get nice and fluffy when baked.

Scrub and wash your large russet potatoes. Dry the potatoes well, poke holes in them, and cover them in olive oil and salt.

Cook the potatoes in the oven for about 1 hour or until soft.

If you don’t have any bacon leftover from breakfast, make bacon if you don’t plan on using bacon bits.

I prefer to bake bacon in the oven at 400 degrees F for 20-25 minutes. Use parchment paper on the sheet pan for easy clean up.

Once your bacon is cooked, drain any grease and chop it into small pieces.
