Cut 1 lb of chicken breasts into bite-sized cubes. Set aside.
Mix together flour, salt, pepper, garlic, and paprika in a container or zip lock bag.
Dredge the chicken pieces into the flour/seasoning mixture until well coated in flour and seasoning.
Heat a large skillet over medium-high heat. Add butter and oil to the skillet.
Once the butter is melted, add the breaded chicken to the skillet. Cook the chicken for 4-5 minutes on each side until golden brown and it reaches an internal temperature of at least 165 degrees F.
Take the chicken out of the skillet and put it aside on a plate.
To the same skillet, add the minced garlic, chopped sun-dried tomatoes, and chicken broth to the skillet.
Lower the heat to about medium heat and add heavy cream and freshly grated Parmesan cheese. Add the Parmesan cheese slowly and stir well.
Season the sauce with red pepper flakes, oregano, and thyme.
Stir together well and let simmer. Once the sauce starts to slightly thicken (this could take about 5 minutes or so) add your frozen cheese tortellini to the skillet.
Cover the skillet with a lid and let it simmer until the cheese tortellini is tender.
Once the tortellini is tender, add the cooked chicken back to the skillet and stir. Top with dried parsley and additional Parmesan cheese if desired. Serve and enjoy!
