Rinse one cup of long grain white rice with water and set aside.
Brown ground beef with chopped onion. Season with salt, pepper, paprika, chili powder, onion powder, and cumin. Drain grease from the skillet.
Add minced garlic, diced tomatoes, chili beans, beef broth, tomato sauce, and rice to the skillet.
Once it starts bubbling turn the heat down to medium low, cover with a lid, and cook for about 20 minutes or until the rice is cooked to your liking. Top with shredded cheddar cheese and put in the oven to melt the cheese (or cover it and let it sit on the stove until the cheese melts).
We topped this with some jalapeños, sour cream, and hot sauce. Enjoy! Let me know if you try it out!
