Chili Rice Skillet Meal

This Chili Rice Skillet Meal is easy to make and uses ingredients you probably already have in your pantry! This is a one pan meal that takes only about 30 minutes to make. It’s perfect for a busy weeknight dinner.

Ingredients

  • 1 lb of ground beef
  • 1 chopped onion
  • 1 TBSP minced garlic
  • 1 TBSP chili powder
  • 1 tsp paprika
  • 1/2 tsp each of salt and pepper
  • 1 tsp onion powder
  • 1/2 tsp cumin
  • 15.5 oz can of chili beans
  • 14.5 oz can of diced tomatoes
  • 1 1/2 cups of beef broth
  • 8 oz can of tomato sauce
  • 1 cup of rice
  • 1 1/2 cups of shredded cheddar cheese
  • Jalapeños
  • Sour cream
  • Hot sauce

Prep Chili Skillet Meal

Start making the recipe by gathering all ingredients needed. Make sure you have ground beef thawed, chop an onion, and measure out all of the seasonings needed for the recipe. I prefer to make my own chili seasoning blend, but you could also use a chili seasoning packet.

Rinse one cup of long grain white rice and set aside.

Make Chili Rice Skillet

Heat a large skillet over medium high heat. I like using my 12 inch cast iron skillet, but any large skillet will work. Add one pound of ground beef and the chopped onion.

Seasoned Ground Beef

Season with salt, pepper, paprika, chili powder, onion powder, and cumin. You can also use a chili seasoning packet instead of these seasonings if you prefer. Drain grease from the skillet.

Add minced garlic, diced tomatoes, chili beans, beef broth, tomato sauce, and rice to the skillet.

Once it starts bubbling turn the heat down to medium low, cover with a lid, and cook for about 20 minutes or until the rice is cooked to your liking.

Top with shredded cheddar cheese and put in the oven to melt the cheese (or cover it and let it sit on the stove until the cheese melts).

Once the cheese is melted it’s time to eat! We topped this with some jalapeños, sour cream, and hot sauce. This is really good to scoop up with some Frito’s Scoops!

  • I prefer to use the spices listed in the recipe, but you can also use a chili seasoning packet instead of the seasonings in the recipe if preferred.

    I’m usually the cook in the house but recently had Achilles surgery so my husband is on dinner duty. I found this recipe for us to have and he made it tonight. It was super simple to make and was delicious! Will definitely make this again!
    One side note, the hubs was confused with the wording about using the chili seasoning packet, I explained that it was an either or, not a both. Some may also find that verbiage a little confusing!
