Crockpot Garlic Parmesan Chicken and Gnocchi

Equipment

  • 1 Crockpot

Ingredients

  • 1 lb chicken breast
  • 1/2 tsp pepper
  • 1 tsp each of paprika, onion powder, and Italian seasoning
  • 2 TBSP minced garlic
  • Buffalo Wild Wings Parmesan Garlic Sauce just enough to cover chicken
  • 15 oz jar of Alfredo Sauce
  • 1 large handful fresh spinach
  • 17.6 oz package of shelf stable gnocchi
  • 1 cup of shredded mozzarella cheese
  • Shredded parmesan cheese for topping

Instructions

  • Spray a crockpot with cooking spray.
  • Add the chicken to the crockpot and season with pepper, paprika, onion powder, and Italian seasoning.
  • Add minced garlic.
  • Add some garlic Parmesan sauce. I use just enough of the sauce to cover the chicken. You can always add more sauce if needed once everything is cooked.
  • Add the jar of Alfredo sauce and cook on low for 4-6 hours.
  • Cube or shred the chicken and add it back to the crockpot.
  • Add the gnocchi (uncooked), spinach, and mozzarella cheese. Stir well.
  • Cook on low for 30-40 minutes or until gnocchi is tender.
  • Serve and enjoy! We topped this with Parmesan cheese and it was delicious!

Notes

I usually use Buffalo Wild Wing's Parmesan Garlic sauce for this recipe, but you can use any store bought brand.
