Fiesta Chicken Tater Tot Casserole

This is an easy one pan dinner recipe perfect for Taco Tuesday!

Ingredients

  • 1 lb chicken breast
  • 1/2 tsp each salt and pepper
  • 1 tsp each of cumin, dried cilantro, onion powder
  • 2 tsp chili powder
  • 1 can corn drained
  • 1 can black beans drained and rinsed
  • 1 can Rotel Diced Tomatoes & Green Chiles not drained
  • 1 cup sour cream
  • 2 cups shredded Cheddar Cheese
  • Tater Tots or Crispy Crowns
  • Taco sauce
  • Cilantro

Instructions

  • Cook one lb of chicken cut into cubes in a skillet over medium high heat. Add some oil and season with salt, pepper, cumin, dried cilantro, chili powder, and onion powder. You could use a taco seasoning packet instead of these seasoning if you would rather do that.
  • Add one can of drained corn, one can of Rotel (not drained), 1 can of drained and rinsed black beans, 1 cup sour cream, and about 1 cup of shredded cheddar cheese. Stir everything together well. Top with one more cup of shredded cheese.
  • Top with tater tots or the crispy crowns. I didn’t quite use the whole bag. Bake at 400 degrees for about 30 minutes or until the tater tots are cooked to your liking. You can also broil the tater tot casserole for a few minutes to help the tots get crispy.
  • Top with your favorite taco sauce and cilantro. Enjoy! Let me know if you try it out!
