Fiesta Chicken Tater Tot Casserole

Fiesta Chicken Tater Tot Casserole is an easy one pan dinner recipe that is so good! This is a great dinner recipe for switching up Taco Tuesday.

I like making this with chicken breast, Taco seasoning, corn, black beans, Rotel, sour cream, cheese, and crispy crowns! I served it with a chopped Mexican street corn salad mix and it was perfect.

Ingredients

  • 1 lb chicken breast
  • 1/2 tsp each salt and pepper
  • 1 tsp each of cumin, dried cilantro, onion powder
  • 2 tsp chili powder
  • 1 can corn (drained)
  • 1 can black beans (drained and rinsed)
  • 1 can Rotel Diced Tomatoes & Green Chiles (not drained)
  • 1 cup sour cream
  • 2 cups shredded Cheddar Cheese
  • Tater Tots or Crispy Crowns
  • Taco sauce
  • Cilantro

Make Fiesta Chicken Tater Tot Casserole

To start making this easy recipe, cut one lb of chicken breast into small cubes.

Heat a large oven safe skillet over medium high heat. I like using my 12 inch cast iron for this recipe to keep it a one pan dinner.

If you don’t have an on oven safe skillet you can always brown the ground beef and then transfer everything to a baking dish if needed.

Next, add the chicken, some oil, and season with salt, pepper, cumin, dried cilantro, chili powder, and onion powder.

You could use a taco seasoning packet instead of these seasonings if you would rather do that.

Add one can of drained corn, one can of Rotel (not drained), 1 can of drained and rinsed black beans, 1 cup sour cream, and about 1 cup of shredded cheddar cheese.

Stir everything together well. Top with one more cup of shredded cheese.

Top with tater tots or the crispy crowns. I didn’t quite use the whole bag of crispy crowns.

Bake at 400 degrees for about 30 minutes or until the tater tots are cooked to your liking.

You can also broil the tater tot casserole for a few minutes to help the tots get crispy.

Serve Tater Tot Casserole

Once the tater tots are cooked how you like them, it’s time to eat!

I like to top with cilantro and some taco sauce or Buffalo Wild Wings Southwest Ranch sauce. I served this with an easy chopped Mexican street corn salad mix.

This tater tot casserole is also good topped with sour cream or any of your other favorite taco toppings!

Tips and Frequently Asked Questions

  • A large oven safe skillet is best for this dish. I like to use a 12 inch cast iron when making this meal.
  • Freshly shredded cheese is my preference for this type of dish because it seems to melt better than pre-shredded.
  • I like using the seasonings listed in the recipe for taco seasoning, but you could use a taco seasoning packet instead of the seasonings listed if you prefer.
  • I like topping this with taco sauce or Buffalo Wild Wings Southwestern Ranch, but it’s also good topped with sour cream or really any of your favorite taco toppings.
  • Swap the chicken for 1 lb of ground beef if you’d rather make it with beef. Ground chicken or turkey could also be used in place of the chicken.
