This is an easy sheet pan meal the whole family loves! Juicy chicken thighs, roasted vegetables, cheese, and the sweet honey mustard sauce makes a delicious meal!

Honey Mustard Chicken Thigh Sheet Pan Meal

Ingredients

  • 2 lb boneless chicken thighs
  • 1 tsp each salt, pepper, and onion powder
  • 2 tsp each garlic powder and smoked paprika
  • Small head of broccoli chopped
  • 24 oz baby potatoes quartered
  • 1 onion sliced
  • 1-2 tbsp Olive oil
  • Honey mustard dressing
  • 1 cup shredded Colby Jack cheese
  • 2 green onions chopped

Instructions

  • Preheat the oven to 400 degrees F. Spray a large sheet pan with cooking spray.
  • Wash the baby potatoes and quarter them. Slice an onion and chop your broccoli. Be sure to leave the broccoli in slightly larger pieces.
  • Add all of the veggies to the sheet pan and drizzle some olive oil over them. Season the veggies with about half of the seasoning blend.
  • Next, add the chicken thighs to a bowl and season with the rest of the seasoning. Add enough Honey Mustard to coat the chicken. Stir until the chicken is well coated in seasoning and sauce.
  • Bake at 400 degrees F for about 35-40 minutes, or until the chicken reaches an internal temp of at least 185 degrees F.
  • Top the potatoes and broccoli with a handful of shredded Colby jack cheese and another drizzle of honey mustard if desired. This step is really optional. The sheet pan meal will be good with or without the cheese and additional sauce.
  • Broil for 1-2 minutes. Top the sheet pan meal with chopped green onions. Enjoy!

  • To keep this recipe really easy, I used a store-bought honey mustard dressing we already keep stocked in the refrigerator. You can use any brand sauce your family likes or make a homemade version.
  • The shredded Colby jack cheese is optional in this recipe! If you are looking for a sheet pan meal without cheese you can leave it out!
  • I like using baby potatoes on sheet pan meals because they are faster to cut. You can use russet potatoes, but be sure to cut them in small pieces.
  • Keep the broccoli cut in larger bite-sized pieces, so it doesn't over cook.
  • If you have any leftover bacon from breakfast, bacon would be so good on top of the cheesy potatoes!
  • Sometimes chicken and veggies release a lot of liquid while cooking. You can carefully pour off any excess liquid before broiling the sheet pan for a minute or two.
