Easy Sheet Pan Dinner

Sheet pan meals are one of my favorite meals to make! Ingredients can almost always be prepped ahead of time and the whole meal is cooked on one pan making clean up super easy.

These honey mustard chicken thighs are juicy, sweet, and tangy, and the cheesy potatoes, broccoli, and onions pair perfectly alongside them! This meal is perfect for a busy weeknight dinner.

This sheet pan dinner is made with pretty simple ingredients and doesn’t take a lot of time to prep. To make it even faster, you can cut the broccoli and onions ahead of time and have the seasonings measured and ready to go.

Ingredients for Honey Mustard Chicken Thighs and Veggies

  • Boneless skinless chicken thighs
  • Salt, pepper, onion powder, garlic powder and smoked paprika
  • Small head of broccoli, chopped
  • Baby potatoes, quartered
  • Onion, sliced
  • Olive oil 
  • Honey mustard dressing
  • Shredded Colby Jack cheese
  • Green onions, chopped

Make Honey Mustard Chicken Thigh Sheet Pan Meal

Preheat the oven to 400 degrees F. Spray a large sheet pan with cooking spray.

Wash the baby potatoes and quarter them. Slice an onion and chop your broccoli. Be sure to leave the broccoli in slightly larger pieces, so it doesn’t overcook.

Add all of the veggies to the sheet pan and drizzle some olive oil over them. Season the veggies with about half of the seasoning blend.

Next, add the chicken thighs to a bowl and season with the rest of the seasoning.

Add enough Honey Mustard to coat the chicken.

Stir until the chicken is well coated in seasoning and sauce.

Add the seasoned and sauced chicken thighs to the sheet pan of veggies.

I like to use a spoon to make a little hole for the chicken between the broccoli and potatoes.

Uncooked Honey Mustard Chicken Thigh Sheet Pan meal

Bake at 400 degrees F for about 35-40 minutes, or until the chicken reaches an internal temp of at least 185 degrees F.

Technically the chicken is safe at 165 degrees F, but I like to cook thighs a little longer to help them be more tender and juicy!

Once the chicken is fully cooked top the potatoes and broccoli with a little bit of shredded Colby jack cheese.

This step is optional, but the cheese is so good with the sweetness of the honey mustard.

Add a little bit more honey mustard to the sheet pan meal if desired.

Broil for just a few minutes to melt the cheese.

Serve Honey Mustard Chicken Thigh Sheet Pan Meal

Once the cheese is melted, it’s time to eat! Top the sheet pan meal with chopped green onions and serve.

This is a whole meal on it’s own, but you can also serve it with a roll or a salad if you need an extra side.

Store any leftovers in the refrigerator in an air tight container. The leftovers of this meal would be good for lunch the next day!

Tips and Substiutions

  • To keep this recipe really easy, I used a store-bought honey mustard dressing we already keep stocked in the refrigerator. You can use any brand sauce your family likes or make a homemade version.
  • The shredded Colby jack cheese is optional in this recipe! If you are looking for a sheet pan meal without cheese you can leave it out!
  • I like using baby potatoes on sheet pan meals because they are faster to cut. You can use russet potatoes, but be sure to cut them in small pieces.
  • Keep the broccoli cut in larger bite-sized pieces, so it doesn’t over cook.
  • If you have any leftover bacon from breakfast, bacon would be so good on top of the cheesy potatoes!
  • Sometimes chicken and veggies release a lot of liquid while cooking. You can carefully pour off any excess liquid before broiling the sheet pan for a minute or two.

What temperature should chicken thighs be cooked to?

Technically chicken thighs would be safe to eat at 165 degrees F with an internal meat thermometer. I prefer to cook them a little bit longer to 185 degrees F. This will help the thighs be more tender and juicy. The fat renders just a little bit more when cooked to the higher temperature.

Can I use boneless skinless chicken thighs?

Yes, that is exactly what I used for this recipe. If you try to use bone in chicken thighs the sheet pan meal would have to cook longer and may result in overcooked veggies.

Can I use chicken breasts?

I recommend making this exact recipe with chicken thighs for the best results. If you’d prefer to use chicken breasts, you’ll need to adjust the cooking time so the potatoes finish cooking without drying out the chicken. If using chicken breasts they need to be cooked to an internal temperature of 165 degrees F.

Why is there liquid on my sheet pan meal?

Sometimes chicken and veggies will release liquid while cooking. You can carefully pour off any excess liquid before putting the sheet pan meal under the broiler for the last 1-2 minutes.
