Wash and cut the ends off of the Brussels sprouts. I also like to slice them in half.
Chop four pieces of bacon and add it to a skillet over medium heat.
Cook bacon until it is fully cooked and remove it from the skillet.
Add sliced Brussels sprouts and the chopped onion to the skillet and cook over medium high heat.
Add salt, pepper, onion powder, smoked paprika, and red pepper flakes and let them cook until the Brussels sprouts have started to cook down and soften.
While those are cooking in a bowl combine maple syrup, Dijon mustard, vinegar, and minced garlic.
Once Brussels sprouts have softened go ahead and add the syrup mixture and turn the heat down to low.
Add the cooked bacon back the skillet as well.
Stir everything together well and cover with a lid.
Let simmer until the sauce has thickened.
