Peanut Butter Brownie Bites

These are an easy and delicious dessert perfect for all of the Holiday gatherings!

Equipment

  • 1 mini muffin pan
  • 1 Stand or hand mixer

Ingredients

  • 2 packs of Martha White Brownie Bites 15 oz total
  • 2 eggs
  • 6 TBSP Oil
  • 1/2 cup of peanut butter
  • 2 TBSP of butter
  • 3/4 cup powdered sugar
  • 1 cup dark chocolate or semi sweet chocolate chips

Instructions

  • Mix eggs and oil with brownie bite mix according to the directions on the packages. Pour brownie batter into mini muffin pan filling them about half way full.
  • Bake for 10-12 minutes at 350 degrees.
  • While brownies are baking, in a mixer mix together peanut butter, butter, and powdered sugar. Once everything is well combined roll into little peanut butter balls.
  • After brownies are baked, take them out of the oven and immediately press a peanut butter ball down into the brownie bite. Let sit in the pan for a few minutes then remove.
  • If you want to add a drizzle of chocolate over the peanut butter brownie bites you can melt dark chocolate or semi sweet chocolate chips in the microwave (stirring every 10-15 seconds) until melted.
  • Use a fork to drizzle chocolate and let it sit until chocolate dries. Sometimes it also helps to put them in the refrigerator until the melted chocolate has hardened.

Notes

I used two packages of Martha White Brownie Bite Mix, which is about 15 oz total. Any other brownie mix could be used in this recipe I would just use the amount of eggs and oil needed for the brownie mix you are using. Follow the rest of the recipe as written.
