Brown 1 lb of breakfast sausage in a skillet over medium high heat. Drain the grease really well and set aside.
Mix pancake mix with water according to the directions on the box. Stir in cooked sausage, cheese, and syrup.
Spray a mini waffle iron and add a scoop of the pancake mix. Repeat until all of the waffles are made. If you want crispier waffles you can toast them in a toaster too!
This made 11 mini waffles. Dip in more syrup and enjoy! Let me know if you try it out!
