Sloppy Joe Potato Tacos

Sloppy Joe Potato Tacos are a fun twist on regular Sloppy Joes!

Ingredients

  • 5 small/medium potatoes
  • olive oil + salt, pepper, garlic powder, and paprika (for potatoes)
  • 1 lb ground beef
  • 1 chopped onion
  • 1/2 tsp each of salt and pepper
  • 1 tsp each of onion powder and paprika
  • 1 TBSP minced garlic
  • 1-2 TBSP Worcestershire
  • 1 8 oz can of tomato sauce
  • 1/4 cup of ketchup
  • 1 TBSP of mustard
  • 2 TBSP of bbq sauce
  • Shredded cheddar cheese
  • Small flour tortillas
  • Nacho Cheese
  • Sour cream
  • Chopped green onions

Instructions

  • Peel, wash potatoes, and cut them up into cubes. Toss with olive oil, salt, pepper, garlic powder, and paprika (I don’t use exact measurements for this part). Cook the potatoes in the air fryer at 400 degrees for about 20 minutes shaking them around at least a couple of times while they cook.
  • Once the potatoes are cooking, brown the ground beef and onion in a skillet and add salt, pepper, onion powder, and paprika. Add minced garlic, Worcestershire, tomato sauce, ketchup, mustard, and bbq sauce. Stir everything together well. Let simmer on low until the potatoes are ready.
  • Warm up tortillas. Add crispy potatoes to a tortilla. Top with some melted cheese dip. Top with the sloppy joe mix, some chopped green onions, and sour cream.
