Make Crispy Air Fried Potatoes

To start making the Sloppy Joe Potato Tacos, peel about 5 medium sized potatoes. Wash the potatoes and chop them up into cubes.

Once potatoes are washed and chopped, I like to add them to a big bowl and season with 1-2 TBSP of Olive Oil. Next, I add salt, pepper, garlic powder, and paprika. I don’t use exact measurements for this part, but make sure to season them well.

Crispy Potatoes

The potatoes will cook in the air fryer at 400 degrees for about 20-25 minutes. Make sure to shake them around at least a couple of times while they cook.

Make Sloppy Joes

Now that the potatoes are cooking it’s time to make the Sloppy Joe mix! I like making my own sauce for Sloppy Joes, but if you prefer the can of sauce for Sloppy Joes that will definitely work too!

Start by browning a pound of ground beef in a skillet over medium high heat. Add the chopped onion and let those start to cook down.

Next, add the seasonings! I season Sloppy Joes with salt, pepper, onion powder, and paprika. Give this all a good stir and drain any grease from the beef once it has browned.

After browning the meat you want to go ahead and add 1 TBSP of minced garlic, 1-2 TBSP of Worcestershire sauce, 8 oz of tomato sauce, 1/4 cup of ketchup, 1 TBSP of mustard, and 2 TBSP of BBQ sauce.

Sloppy Joe Mix

Stir everything together well and let simmer on low while the potatoes finish cooking.

Serve Sloppy Joe Potato Tacos

Once the potatoes and Sloppy Joe mix is ready, it’s time to build the tacos! Warm up some small taco size tortillas and top them with the crispy air fried potatoes. Drizzle some nacho cheese on top and top with the sloppy Joe mix.

Sloppy Joe Potato Tacos

Top the tacos with any of your favorite taco toppings! I topped mine with some sour cream and chopped green onions. Hot sauce is also really good on these!

Tips and Frequently Asked Questions

  • You can peel the potatoes or leave the peels on if you like that better.
  • I prefer to make my own sauce for the Sloppy Joe’s but if you prefer the canned stuff that will work too!
  • Fresh minced garlic or the jarred minced garlic will work for this recipe.
  • If you don’t have an air fryer you can cook the potatoes in the oven at 400 degrees for about 25 minutes or until they are cooked how you like them. I would also stir/flip the potatoes around about half way through cooking to make sure they cook evenly.
  • I used jarred Cheese Whiz for the nacho cheese, but any of your favorite nacho cheese will work. I also like Ricos canned nacho cheese for recipes like this.
  • Top with any of your favorite taco toppings. I topped them with hot sauce, sour cream, and chopped green onions.

This is a definite keeper. I browned the meat and onions, put it in the crockpot and added everything else for about 3 hours.
