Cut the chicken breasts in half lengthwise to make them thinner.
Heat a griddle or skillet over medium low heat and add the bacon. Cook the bacon, remove it from the griddle, and spread out the remaining bacon grease.
Add the chicken and a sliced onion to the griddle. Season the chicken with salt, pepper, onion powder, garlic powder, and paprika.
Let the chicken cook on both sides until it is golden brown and reaches an internal temp of 165 degrees F.
Once the chicken is cooked, brush some honey mustard over the chicken. Top it with the cooked onions and Colby Jack cheese.
Cover the smothered chicken with a griddle dome until the cheese melts. Top it with some of the crumbled bacon. Enjoy!
