Smothered Honey Mustard Chicken

This is an easy and delicious dinner recipe that I make outside on a griddle, but it can easily be made inside too!

Ingredients

  • 1 lb chicken breast
  • 1/2 tsp each salt and pepper
  • 1 tsp each of onion powder, garlic powder, and paprika
  • 1 onion sliced
  • Honey mustard
  • 8 pieces of bacon
  • Shredded Colby Jack cheese

Instructions

  • Cut the chicken breasts in half lengthwise to make them thinner.
  • Heat a griddle or skillet over medium low heat and add the bacon. Cook the bacon, remove it from the griddle, and spread out the remaining bacon grease.
  • Add the chicken and a sliced onion to the griddle. Season the chicken with salt, pepper, onion powder, garlic powder, and paprika.
  • Let the chicken cook on both sides until it is golden brown and reaches an internal temp of 165 degrees F.
  • Once the chicken is cooked, brush some honey mustard over the chicken. Top it with the cooked onions and Colby Jack cheese.
  • Cover the smothered chicken with a griddle dome until the cheese melts. Top it with some of the crumbled bacon. Enjoy!

Notes

I make this recipe outside on my flat top griddle, but you can easily make it inside on the stove using a couple of skillets instead. 
I like using Ken's Steak House Honey Mustard, but you can make it homemade if you prefer.
